Brown Lentil Salad with Spicy Roasted Brocolli and Curry Dressing

This dish packs a punch giving you energy to face the day with ease. It is protein rich, high in fibre and makes a meal by itself without the need of a lot of cooking. 

It is a fusion of different textures consisting of soft, warm brown lentils with spicy roasted broccoli and chopped vegetables of your choice. It is beautifully complimented with a tangy, savory curry dressing that gives the salad a new dimension.

Ingredients

The Salad
 
- 1 cup brown lentils soaked for 1 hour
- 1 large carrot chopped into small cubes
- 100 gm broccoli, chopped into bite sized pieces
- 2 medium onions, chopped
- 100 gm fresh coconut, grated
- 1/2 tsp cayenne pepper
- 1/2 tsp curry powder
- 1/2 tsp cumin powder
- Salt and pepper, to taste
- 2 slices of whole wheat bread, broken and toasted 

  
The Curry Dressing

- 1 cup of yoghurt
- Paste of 2 small garlic cloves and 2 green chillies
- 1/2 tsp cayenne pepper
- 1/2 tsp curry powder
- 1/2 tsp cumin powder
- Juice of 1/2 lime
- Salt and pepper, to taste


How to make Brown Lentil Salad
  • Start off by boiling the lentils in salted water till they have a slight bite to them (al dente). Drain the lentils but reserve a cup of the water. Put it back into the lentils. Mix in the cayenne, curry powder, cumin powder, salt and pepper. Keep aside to cool.  
  • While the lentils are cooking, marinate the broccoli for 5 mins with cayenne pepper, salt and pepper and 1 tbsp oil. Roast them in a 200 degree oven, toasting the bread along. 
  • Meanwhile chop up the carrots, onions and grate the coconut. 
  • Once the broccoli is done, mix them with the lentils and chopped vegetables in a bowl. Adjust the seasoning. 
  • To make the curry dressing, just mix all the ingredients mentioned and adjust the taste according to your preferences. 
  • Spoon the dressing over the salad and garnish with coriander leaves or parsley. 
  • Enjoy.
