Dads Egg and Potato Grilled Sandwich

My dad is quite the cook himself and I have grown up seeing him whip up some good stuff in the kitchen over the years. Apart from his dals, he makes amazing grilled sandwiches. One of them is his famous Egg and Potato sandwich. It not only tastes good but is also filled with energy that lasts long.


It's a decadent fusion of mashed potatoes and hard boiled eggs which is assisted by the spices he adds. This is just a basic recipe idea. You can add more vegetables or meat or any other ingredient to it if you like.

Ingredients

- 3 tbsp oil
- 1 tsp cumin seeds
- 1 tbsp ginger garlic and green chilli paste
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1 cup of mixed vegetables (optional, whatever you have at home)
- 3 medium potatoes, peeled, boiled and mashed
- 3 eggs hard boiled with yolks mashed and whites chopped finely
- 1 tsp turmeric
- 1 tsp chilli powder
- 1 tsp garam masala 
- 1 tsp amchoor powder or juice of 1/2 a lime
- grated cheese/2 slices of cheese broken into the eggs and potatoes
- 12 slices of bread and butter to apply on them
- salt and pepper to taste
- 2 tsp coriander leaves chopped finely, optional

How to make Egg and Potato Grilled Sandwich

  • Start off my combining the mashed potato and the egg yolks. Then fold in the chopped egg whites. Keep it aside.
  • Fry off the onions with the cumin seeds and ginger garlic and green chilli paste in the oil till the raw smell disappears
  • Add the tomatoes and vegetables (if any) along with the powdered spices and fry till the spices stick to the bottom and oil separates from the sides.
  • Add in the potato and egg mixture into the tomatoes and onions.
  • Season well and combine.
  • Finish off with the cheese, lime juice if required and coriander leaves. Mix to combine.
  • Butter the slices of bread and add the potato and egg mixture on the non buttered side. Place them in a sandwich toaster/grill
  • Grill till done.
  • Enjoy.
