Falafel Sandwich

Crispy falafel made of peas and garbanzo beans stacked in between slices of bread slathered with spicy hummus. It is served with a refreshing salad of cinnamon roasted carrots, pickled onions and fresh cucumber wedges served with a tangy tzatziki sauce



Ingredients
 
For the falafel

- Fresh peas 1 cup
- 2 cups chickpeas, soaked well overnight
- 2 tbsp flour
- 2 tsp chili powder
- 2 tbsp chopped coriander
- 2 tsp cumin powder
- 2 tsp Black pepper powder
- Juice of 1 lime
- Salt to taste

For the hummus

- 1 cup of chickpeas, soaked over night
- 3/4th cup Tahini paste
- 3 cloves of garlic
- Juice of 1 lime
- Salt and chilli powder-to taste
- 2 tsp cumin powder
- 2 tsp black pepper
- 1 tbsp chopped coriander
- Oil
- Water as required

For the salad

- 2 small carrots sliced
- 1 onion sliced
- 2 cucumbers wedged
- ½ tsp cinnamon powder
- Juice of 1 lime
- Salt to taste
- Coriander leaves, chopped

 
How to make Falafel sandwich

Falafel
 
  • Soak all the chickpeas in water overnight- long enough till they become soft and double in volume.
  • Combine all the ingredients for the falafel and blend in a food processor till you get a crumbly mixture.
  • Make balls out of the mixture and roll them in gram flour. Refrigerate for 2 hours to set them
  • Deep fry the balls on a medium high flame till they are crispy and golden brown outside and soft on the inside.

Hummus
  • Cook the chickpeas in a pressure cooker till they are soft.
  • Blend them in a food processor till a paste forms and then add the rest of the ingredients and blend again with water till you get a thick, smooth paste. You could leave it a little chunky for texture.

Salad
  • Mix the carrots with cinnamon and oil and roast in the oven at 180˚c till they are sweet and caramelized- about 15 min
  • Pickle the onions in lime and salt and sugar an hour prior and refrigerate
  • Cut up some wedges of cucumber
  • Mix all three components along with 1 tsp of roasted sesame seeds and chopped coriander just before serving

The sandwich
  • Lightly toast the bread in the oven at 100˚c for about 3-4 min
  • On the bottom bread, spread a generous amount of the hummus.
  • Place the falafel on top, purple and white cabbage, tomatoes and the tangy tzatziki sauce
  • Serve it with a side of the salad
  • Your Falafel Sandwich is ready
